The company that now regularly sells out at farmers markets across Essex and London started with humble beginnings and incredibly hard work. Chef Matt Jones had been brought up around freshly baked food and was working in the kitchen with his Mum as soon as was old enough to knead bread. A passionate grower and gardener, Matt carried his passion for all things organic with him through his life as Head Chef for some of London’s finest eateries during the 1990s.
In 1999, the newly-married Matt and his wife Christelle took on a disused bakery in Hoxton Street, London and Matt set about turning his zest for baking into a small business. The couple worked around the clock, and their freshly baked bread was soon selling faster than they could make it. In 2003, the bakery relocated to Lewisham, along with a dedicated team of more than thirty bakers, and by now the team was producing a range of speciality organic breads, sourdoughs, pastries and chocolate brownies. Since then, the Flour Power City Bakery name has become synonymous with quality, goodness and flavour at scores of fine food and farmers markets across the eastern counties and London.
So what is the secret to Flour Power City’s success? They would say it’s down to simple, good ingredients sourced from the finest producers such as the lovingly milled stone-ground flour from the famous Shipton Mill in Gloucestershire, the finest Belgian chocolate and luxurious French butter.
In line with its commitment to quality, the bakery doesn’t use improvers or stabilisers in anything it produces, meaning it can take a minimum of four to eight hours to produce a loaf of bread. The process is even longer for rye breads and sourdoughs; for these varieties the dough is left to prove slowly, preserving the original natural taste and nutrients - the process from start to finish can take up to 20 hours.
